- 2 tablespoons chopped almonds and pistachios (for garnish)
- 1 tablespoon chopped cashews (optional)
Instructions:
1. Soak and grind the rice:
- Rinse the basmati rice thoroughly under running water and soak it for 30 minutes.
- Drain the water and grind the rice into a coarse paste using a few tablespoons of milk.
2. Boil the milk:
- In a heavy-bottomed pan, bring the milk to a boil over medium heat.
- Stir occasionally to prevent it from sticking to the bottom.
3. Cook the rice paste:
- Slowly add the ground rice paste to the boiling milk, stirring continuously to prevent lumps from forming.
- Cook on low heat, stirring constantly, until the mixture thickens (about 10–15 minutes).
4. Sweeten and flavour:
- Add the sugar and stir until fully dissolved.
- Stir in the cardamom powder, saffron strands, and rose water (if using).
- Let it simmer for another 5 minutes.
5. Cool and serve:
- Pour the prepared firni into small clay pots or serving bowls.
- Garnish with chopped almonds, pistachios, and cashews.
- Allow it to cool, then refrigerate for a few hours before serving.
