Seviyan, or Sheer Khurma, is a traditional Ramadan dessert enjoyed during Iftar. It is a rich and creamy dish prepared with roasted vermicelli, milk, sugar, and nuts.

Ingredients:

  • 1 cup vermicelli (seviyan) (thin variety)
  • 2 cups full-fat milk
  • ½ cup condensed milk (or ¼ cup sugar)
  • 2 tbsp ghee (clarified butter)
  • ½ tsp cardamom powder
  • 2 tbsp chopped almonds, pistachios, and cashews
  • 1 tbsp raisins
  • 5–6 dates (chopped, optional)
  • ½ tsp rose water or kewra essence (optional)
  • A few saffron strands (optional, for a richer flavour)

Instructions:

  • Roast the vermicelli: In a pan, heat the ghee and add the vermicelli. Roast it over a low-medium flame until it turns golden brown. Set aside.
  • Prepare the milk base: In a separate vessel, bring the milk to a boil and add saffron strands for both colour and flavour.
  • Combine ingredients: Add the roasted vermicelli to the boiling milk, stirring occasionally to prevent lumps. Cook for 5–7 minutes until it softens.
  • Sweeten it: Stir in the condensed milk or sugar and mix well. Let it simmer for another 2–3 minutes.
  • Enhance the flavour: Add cardamom powder, rose water, and chopped dates to the prepared seviyan and stir well.
  • Garnish and serve: Turn off the heat and garnish with chopped nuts and raisins. Serve warm or chilled, as per preference.
