1. Foxtail Millet Upma
(Serves 2)
Ingredients:
• ½ cup foxtail millet
• 1 onion, chopped
• 1 green chilli, chopped
• 1 tsp mustard seeds, curry leaves, salt, turmeric
• Vegetables: carrot, beans, peas (chopped)
• 1½ cups water
Foxtail Millet Upma
Method:
Rinse millet and soak in water for 15 minutes. Heat the pan and add mustard seeds and curry leaves. Stir till they turn brown. Add finely sliced onions and green chillies and sauté the whole thing. Add the soaked millet and water. Season with salt and turmeric. Cover it and let it cook until the water is fully absorbed and the millet turns gooey like regular Upma. Serve hot.
2. Ragi Chocolate Pancakes

Ragi Chocolate Pancakes
Ingredients:
• 1 cup ragi flour
• 1 mashed banana
• 2 tsp cocoa powder
• 1 tsp jaggery
• ½ cup milk
• Pinch of baking soda
Method:

Ingredients:
• Soak ½ cup bajra overnight
• Take ¼ cup split moong dal
• 1 small potato, 1 tomato (chopped)
• Cumin, ginger, green chilli, turmeric (according to your taste)
• Salt to taste, 2½ cups water
Method:
Heat a pressure cooker, sauté cumin seeds, shredded ginger, and finely cut chillies. Add the vegetables, soaked bajra, and moong dal. Add turmeric, salt, and water. Pressure cook for 4–5 whistles.
The resultant Bajra Khichdi is best enjoyed with curd, pickle and pappad.
